Campanula persicifolia: 3’ high x 1’ wide / full sun to part shade / zone 3
This is a beautiful, low-maintenance, clumping plant with edible flowers and leaves. The younger leaves make a good salad ingredient, and the older ones can be cooked as a potherb. It will self-seed in favourable conditions. The bees love the flowers, too. If you pick the flowers for salads the plants will generously produce more. We’re trialling this as an edible ground cover; not sure yet but the first results seem promising.
