Robinia psudoacacia: 80’ high x 50’ wide / full sun to part shade / zone 3
The flowers of this large tree are subtly delicious and can be added to salads, soups, sandwiches, pastas, or just about any cooked dish. They can also be enjoyed straight off the tree. That’s only the first of many functions of the mighty black locust: it also fixes nitrogen, it can be coppiced for firewood or building materials (the wood has 60 times the rot-resistance of cedar, and is a valued lumber). Be aware that it’s a thorny tree, and it sends up a lot of suckers, so watch for those if you want to contain it.
