Every part of this anise-flavoured herb is edible: the stem, leaves, flowers, seeds, and roots. We use the fern-like leaves and flowers in salads or nibble on the seedpods. The roots are good raw or cooked. It self-seeds, but can be controlled by eating the seeds when they’re still green; they’re like little liquorice candies and are difficult to stop eating! Native to Europe, the umbelliferous flowers provide nectar for beneficial insects; it’s also a popular ornamental.
