Sambucus canadensis: 8-10’ high x 8-10’ wide / full sun to 3/4 shade / zone 3
This is a very easy-to-grow and versatile native berry bush. We use the flowers to make tea or a nice summer drink similar to lemonade, or batter and fry them to make delicious fritters. The berries are traditionally used in pies and jams. We use a steam-juicer to extract the juice, and then we ferment it into a delicious wine. It does well in wet soils, and can tolerate quite a shady spot in the garden. Two are required for pollination.
