I’m always on the lookout for edible groundcovers, as they’re the key to making edible landscapes low-maintenance. This is a great example. It forms dense clumps and spreads to cover the ground and keep weeds from germinating. It’s also a popular foraged food in Turkey, where it’s made into a popular dish called kaldirik. The young leaves and flower stalks are cooked and used like spinach. The leaves are also dried for later use as wraps.
