Workshop: Making Use of the Harvest

This workshop is designed to answer the question: what do I do with all of this food? A food forest, over time, becomes a very productive landscape, and while there’s no food waste associated with unharvested crops (as they provide nutrition for wildlife and the soil food web), there’s often a steep learning curve associated with making use of rare and unusual crops. We employ a number of tricks and techniques for making use of a wide variety of greens, edible flowers, fruit, nuts and tubers, to incorporate them into our diet. We’ll show you how to harvest efficiently and how to use the produce from an edible landscape in a number of highly variable (and relatively easy) dishes, and we’ll also demonstrate a number of excellent ways to preserve your harvest through the winter. We’ll show you a few great kitchen contraptions we’ve found useful, and we’ll be tasting lots of delicious treats from the garden.
