This rare Ontario native is considered threatened. It also provides one of the most intriguing tree vegetables: the immature seeds make a fine cooked bean, similar to fava beans. They’re dioecious: male and female flowers are produced on separate trees, so it’s best to plant a few to ensure you get at least one male and one female. They’re otherwise unfussy and easy to grow, as long as they have lots of sun. They’re attractive trees, with doubly-compound leaves and a stately form.
