This root vegetable has been cultivated in China for centuries. The small tubers have a pleasant, crunchy texture and a sweet, mild flavour; they can be eaten raw in salads or lightly cooked. It is a member of the mint family, and spreads to form a ground cover (especially in sunny areas) and colonizes disturbed soil, so it appreciates annual harvesting. It also attracts bees.
