This was once a popular perennial vegetable in its native Europe. Used primarily for its spring shoots, which are used like asparagus, it also has edible leaves, flowers, and seeds. The leaves can be used like spinach in soups, stews and stir-fries; the flower buds can be used like broccoli, and the seed can be cooked as a grain, though they should be soaked overnight to remove the saponins they contain.
