A very beautiful attention-getter, this plant is normally a biennial, but if you cut the flower heads off it can be coaxed into life as a short-lived perennial. If you leave them on, they’ll self-seed. The leaves and shoots have a distinctive, strong flavour, comparable to juniper berries, and can be chopped up for use in salads, stir-fries, soups and stews. Candied Angelica stems are often used to decorate desserts. Makes an excellent pollinator-attractor, too.
