Closely related to the globe artichoke, this Mediterranean thistle makes a spectacular statement in the garden. The unopened flowerheads can be used as artichokes, and the leaf ribs can be peeled and cooked; a national dish of Italy is made with breaded cardoon ribs. Please note that these are not very hardy to Ontario, and need a sheltered location with well-drained soil.
