Rumex Patientia: 5’ high x 2’ wide / full sun / zone 4
This is the largest and best-flavoured member of the dock tribe; it’s a cultivated vegetable in parts of Eastern Europe, where it’s added to spring soups, and also used as a wrap (in the same way grape leaves are used). The leaves are edible as long as they’re still in the growth stage, at up to a foot in length (they get to be nearly two feet long). Use any way you would spinach.
