Phytolacca americana: 6-10’ high x 2’ wide / full sun to part shade / zone 4
This is one of the best herbaceous perennials to grow if you have a lot of room. All parts of the mature plant are poisonous, but the spring shoots are picked when about 8″ high, and boiled in two changes of water. It sounds like a lot of work, but it’s more than made up for by the ease of growing it, and pokeweed is delicious! It’s one of the most popular wild edibles in its native United States. They slowly expand to form colonies, and make a good (albeit tall) ground cover. Once a clump is established it can be left to its own devices.
