A strikingly beautiful North American wild edible, Solomon’s seal slowly expands by rhizomes to form colonies. The shoot is a first-rate vegetable, tasting much like asparagus when steamed. Before it leafs out in spring, the shoot is picked, the leaves are removed and the stalk is cooked or eaten raw. Only about 1/3 of the shoots from a colony should be harvested each year, so that it can recuperate from the loss. Makes a good, albeit tall, ground cover. We harvest from around the perimeter of our patch to keep it from spreading.
