This beautiful native is one of the most highly regarded vegetables of the Cherokee; young shoots and leaves are boiled, steamed, or fried in bacon grease. We fry them and have them with eggs. They can also be eaten raw in salads. They have a wide native range, and are often planted in native wildflower gardens. They’ll spread quickly both underground and by seed to form a dense colony, and make an excellent (albeit tall) groundcover.
