Bunias orientalis: 2’ high x 1-2’ wide / full sun to part shade / zone 4
This is a great low-maintenance vegetable, quite popular in the former USSR. The flowerheads are often compared to broccoli, and can be eaten raw in a salad or they can be steamed or cooked in your favourite dish. They’re a bit spicy, and add some culinary flair to a stir-fry. They make good ground covers, too.
