This is one of our favourite and most-used perennial vegetables. It’s popular in Europe, where it’s revered for its lemony flavour. We use the leaves raw in salads and sandwiches and smoothies, and cooked into delicious soups, frittatas, and pastas. The seedless variety doesn’t produce flower stalks, and so doesn’t get bitter, so it’s nice and tender from early spring until the frosts of fall. It only gets to be about a foot tall and wide, and if numerous plants are planted about 8″ apart they make one of the very best edible ground covers.
